Samsung's promised Bixby Remapping Update is now available to owners of older Galaxy flagship models, including the S8 and S8 Plus, S9 and S9 Plus, Grade 8 and Grade 9, after being released in the forthcoming S10 range
Suppose you have a compatible device running Samsung's Android Pie / One Touch interface software, and you should receive a new update that will bring the common feature to your phone.
There are some reservations about the feature, as Dan Seifert of Twitter at The Verge on Twitter states: You can not remap the Bixby button to another language assistant like Google Assistant Start or Cortana, even if you have these apps installed.
My S10 + review sample has received an update from the Bixby app, which allows me to natively assign the button to a more useful command. Guess which app can NOT be assigned?

Users also can not fully disable the button or remove Bixby. The best you can do is set your app to start with a single click, while double-clicking opens Bixby. Regardless of your settings, Bixby is always started by pressing and holding the Bixby button.
